Carrot Cake Smoothie

Blend all this goodness together and you've got a refreshing dessert in a glass that can't be beat. Megs and Pegs at Curry Girls Kitchen provide yet another unbeatable smoothie recipe!

Ingredients:

1 Cup shredded or diced carrots

¼ Cup pineapple chunks (they come in individual packages or use fresh!)

1 Cup coconut water

½ Cup hazelnut milk or any favorite milk

2 big squirts Culinary Coconut Milk by So Delicious Dairy-Free

Summertime Chilled Tomato Soup With Guacamole

The wonderful thing about the garden season is that you have such a variety of foods that need little done to them to taste wonderful. Try harvesting a few of your favorite veggies, and breaking out the hand blender to make the perfect appetizer or first course. 

If you have never tried cold soups, you are in for a treat. They retain all the robust flavor of the fresh ingredients, and are perfect for an evening meal, with a baguette of crusty bread and some good cheese.

Ingredients:

1-2 Tablespoons Raw Cacao

3 Dates, pitted

1 Tablespoon fresh ground Flax seeds (If using a high speed blender like VitaMix, no need to grind)

1 Tablespoon Chia seeds

Cauliflower Steak Sandwich Recipe from Curry Girls Kitchen

Don't sit in the corner at a summer barbeque just because you don't eat meat. These hearty grilled vegetarian and (if you choose) gluten-free savory sandwiches will make the carnivores eye you with envy!

Cauliflower Steak Sandwich

Ingredients:

1 large Cauliflower or broccoflower/Romanesco head

2 cloves garlic, minced

Celtic sea salt

Olive oil

For Sandwich:

2 slices toasted whole wheat bread or, for gluten-free, Udi’s whole grain brown rice bread

Basil pesto

Avocado

In Praise of Ugly Fruit

I just ate the first nectarine from a tree in my back yard. I planted the tiny tree two years ago and the first year it bore no fruit, year two the birds got to every one of the tiny superball-sized orbs long before they ripened, and now, this morning, I beat the avian marauders to the punch and bit into a still very small but actually sweet and juicy fruit (I'm choosing to ignore how freakishly pre-season it is for nectarines to be ripe and juicy the first half of May...and all THAT entails).

Chai Tea Porridge Recipe | Curry Girls Kitchen

A foggy morning had us craving something warm. So we blended two of our favorites Chai Tea and creamy rice cereal. We were all out of Bob’s Red Mill Creamy Rice Farina ~ so we blended sprouted brown rice in our Magic Bullet, and made our own steel cut rice!

Worked perfectly!

Chai Tea Porridge

Ingredients:

1/3 Cup cream rice farina or 1/3 Cup rice that’s been steel cut in the “bullet”

2/3 Cup Chai ~ pre-made tea, strong!

Cinnamon

Dates, chopped

Hazelnut Milk or Almond Milk

The 90 Percent Rule of Nutrition - Be Mostly Good

Do you know about the 90 percent rule? It’s the theory that you can slack off (within reason) from your regular nutrition plan up to 10 percent of the time and still meet your nutrition and fitness goals.

“I would be happy if I could just lose two more inches of belly fat”, is a phrase that I hear quite often. “What exercises can we do that will help me lose that?” is usually the next question. When my response involves focusing in on the nutrition, there always seems to be a roll of the eyes that say “I knew you were going to say that.”
