Gluten-Free Cookie Crust Lemon Pie and Cinnamon Whipped Cream

Gluten-Free Lemon Pie

Serves 6-8

Pre-heat oven to 350 degrees

Pecan Crust

Ingredients:

1 Cup finely ground Gluten-Free Graham Cookies

4-5 Pamela’s shortbread cookies, finely ground in mini processor

2 Tbl coconut flour

2 tsp vanilla extract

5 Tbl melted butter

Method:

To make crust – mix all ingredients together in bowl. Stir until blended.

With your hands, press crust evenly into pie pan and up sides.

Smaller pie plate works best.

Set aside. Do NOT pre-bake.

Persimmon Waffles: Gluten-Free Recipe

OH HOW WE LOVE OUR PERSIMMONS!

We had lots of them ripening at the same time. So we froze some for our smoothies and Pegs made waffles with them today.

They tuned out really yummy!

Persimmon Waffles 

Ingredients:

1 ½ Cups Pamela’s Gluten-Free pancake flour, or your favorite G-F pancake/waffle blend

¼ Cup Fresh ground flax seeds (grind in a coffee mill)

¼ Cup coconut four

2 Tbl. Honey

2 Tbl. Pure Maple Syrup

2 eggs

Gluten-Free Chocolate Volcanoes

Individual Chocolate Volcanoes

Ready to pull out all the stops and hit a homerun in the fancy foods department for New Year's entertaining? Then these gluten-free volcano desserts are the ticket to a happy, healthy celebration.

Makes 6 individual ramekins

What you need:

5 oz. bittersweet or semisweet chocolate
10 Tbl. (1 ¼ sticks) Unsalted butter
3 large eggs
3 large egg yolks
1 ½ Cup powdered sugar
½ Cup Gluten-Free flour (we use Pamela’s Artisan flour)

Baking sheet

6 ramekins

No-Bake Chocolate Fudge

No-Bake Chocolate Fudge hand-made “Truffles”

Small batch:

½ Cup raw cacao powder (no added sugars or dairy)

2-3 Tablespoons coconut oil

¼ Cup or ½ of a small ripe avocado

1 Cup macadamia nuts

2-3 Tablespoons honey

2-3 Tablespoons maple syrup

Pinch of Celtic sea salt

Optional Additions: 1 tsp vanilla, ¼ tsp cinnamon, and/or ½ Cup chopped almonds

Optional toppings for “truffles” (see below)

“HELLO DOLLY BARS, MAGIC BARS, OR 7-LAYER BARS”

Try this updated, healthy recipe twist on traditional Hello Dolly bars (variously known as “Magic Bars” or “Seven-Layer Bars”) from Curry Girls Kitchen. Healthy substitutions help you make gluten-free and/or dairy-free versions.

Life is short, eat dessert first! It’s a terrific philosophy, and even dietary restrictions or choices won’t keep you away from delicious indulgence the Curry Girls Kitchen way! Crumbled cookie crust and smooth chocolate pudding filling…where’s my fork?!

Cookie Crust:

1 package Pamela’s gluten-free shortbread cookies, ground

½ – 1 Cup Pamela’s gluten-free double chocolate chip cookies, ground

2 Tablespoons coconut flour
