And you can give your guilt the day off, since this easy recipe is dairy-free, contains no processed sugar, and uses avocado and coconut oil to replace fats. Believe it or not, there is such a thing as healthy decadence. Here is the kind-to-your-body version of a junk food recipe so you can celebrate the good rich flavor while respecting yourself enough to give you body the best. You deserve it! (and you deserve chocolatey goodness!)

3 Dates, pitted

1 Tablespoon fresh ground Flax seeds (If using a high speed blender like VitaMix, no need to grind)

Gluten-Free Pecan Scones

*Preheat oven: 375 degrees

You'll need: 2 parchment lined cookie sheets

Makes 24 small scones (sampled size) or 12-18 medium to larger scones

 

DRY Ingredients:

1 ½ Cups Pamela’s Gluten-free Pancake and Baking flour

¾-1 Cup ground pecans

¼ Cup coconut flour

¼ Cup freshly ground Flax seeds

1 tsp. Baking Powder

1/3 Cup packed Brown Sugar OR 1/2 Cup packed Coconut Sugar 

1 tsp cinnamon

No-Bake Chocolate Fudge

No-Bake Chocolate Fudge hand-made “Truffles”

Small batch:

½ Cup raw cacao powder (no added sugars or dairy)

2-3 Tablespoons coconut oil

¼ Cup or ½ of a small ripe avocado

1 Cup macadamia nuts

2-3 Tablespoons honey

2-3 Tablespoons maple syrup

Pinch of Celtic sea salt

Optional Additions: 1 tsp vanilla, ¼ tsp cinnamon, and/or ½ Cup chopped almonds

Optional toppings for “truffles” (see below)

Life is short, eat dessert first! It’s a terrific philosophy, and even dietary restrictions or choices won’t keep you away from delicious indulgence the Curry Girls Kitchen way! Crumbled cookie crust and smooth chocolate pudding filling…where’s my fork?!

Cookie Crust:

1 package Pamela’s gluten-free shortbread cookies, ground

½ – 1 Cup Pamela’s gluten-free double chocolate chip cookies, ground

2 Tablespoons coconut flour
